The current global focus on health, nutrition and food consciousness fits directly in with Dr Juice founder, Eduardo Herraiz’ belief that nutrition plays a vital role in a person’s holistic wellness, “We simply cannot be well if we are putting junk into our bodies. Fennel with its Mediterranean origin was used by the ancient Greeks and Romans extensively for culinary as well as medicinal purposes. This highly aromatic and flavourful herb is now readily available and a great source of fibre, folate, potassium and vitamin C. “It makes me think of a cool shower after a long day at the beach, something revitalising but soothing too,” says Eduardo.
